It probably says more about Malcolm and possibly Neal if they feel safe around the cowboys than it does about Doc and Raylan. He might make Raylan uncomfortable with their subjects of conversation but at least he doesn't put him on the spot watching him, just topping up Raylan's glass wordlessly when it gets a little empty and grunting at the right intervals to break up the monotony of silence and keep things interesting.
Doc wouldn't have asked how exactly a yard of children is supposed to fit in a beach and beautiful women if Raylan had mentioned the former. Both are not unreasonable wants, but they seem like rather exclusive options.
